Today we talking recipes and ingredients but in a healthy way. (We don't Need those extra calories)
Most people feel healthy food is nasty, tasteless, raw and just yuck but I put it to you fellas- you lie!
The major problem with clean eating in Nigeria is scarcity or over pricing of some ingredients.(healthy eating is expensive!) The other day I was trying to buy some broccoli and asparagus from one of the indigenous super market but the prices were a bit ridiculous and they were not even fresh, imagine!!! (sigh). So 'mix and match' will show how we can use the available ingredients to make different HEALTHY and yummy meals without having to break the bank. Another problem is the food might get boring after some time (eating salads with no dressing, yuckest!!!) 'mix and match' will furnish you with all the healthy alternatives (did I hear somebody say hallelujah?!)
The benefits of healthy eating are endless apart from keeping that body tight ;) your immune system gets stronger to fight against various diseases, your skin starts to glow even more, promotes hair growth, endless possibilities with healthy eating yo. (I can go on but naah! We aint in biology class)
Straight to the food!! (I talk too much *rme*)
INGREDIENTS
- whole wheat spaghetti (shoprite)
-chicken breast ( any cold store/room)
-red and green pepper (local market)
-cucumber (local market)
-garlic (local market)
-lettuce (local market)
-tomatoes (local market)
-light/dark soy sauce (any random supermarket)
-extra virgin olive oil or sunflower oil (any supermarket)
-dry pepper
-salt
-banana (optional)
-0nions
PROCESS
- wash and spice the chicken breast with dry pepper, salt and a medium sized onion. Allow to boil for 10mins
- while the chicken is boiling, break the spaghetti according to your preference in briskly boiling water. Leave to cook for 5/6mins
- peel, wash and chop finely half a bulb of garlic and dice an onion bulb
-when the spaghetti is cooked, drain the excess water in a sieve and allow to drain.
-when the whole chicken breast is cooked, allow it to cool for a while and cut in strips
-skin the tomatoes by putting the tomatoes in a bowl of hot water and run some cold water over it immediately then peel off the skin of the tomatoes.
-in a dry pot placed over low heat, put some of the diced onions and about 3 drops of olive oil. Leave to simmer for a few seconds.
-put the skinned tomatoes in the pot, allow to cook for about 30seconds then stare the mixture till it forms a smooth slightly thick paste.
-pore the chicken strips, chopped garlic and soy sauce (as desired) in the paste( by now the paste might be a bit watery). Stir all together and allow to cook for about 30 seconds.
-after the 30 seconds, pour the spaghetti in the mixture and mix everything all together. Leave under low heat
-add pepper and salt to taste.
- wash and slice the red and green pepper removing every trace of seed inside the pepper, allow to drain then add to the mixture and stir all together.
-leave for 10 seconds until its dry and tardaaaah! Our whole wheat goodness is cooked
- wash/slice the lettuce, banana and cucumber, arrange and serve the meal as seen in the picture above or as desired.
N.B: you can also use regular spaghetti but they contain way too much carbs for me, you can also use other spices (such as maggi, curry or thyme) but we keeping it healthy and natural as possible.
